FAPC to host Research Symposium

STILLWATER, Okla. – The Food & Agricultural Products Center on the campus of Oklahoma State University in Stillwater and the Institute of Food Technologists-Oklahoma Section are hosting a research symposium to highlight food and agricultural products research conducted by the FAPC and OSU.

The symposium will be held Feb. 22 in room 201 of the FAPC from 8 a.m. to 4:15 p.m. and will feature a combination of oral and poster presentations, as well as a keynote speaker.

The program will include discussions of current industry advances and presentations of current research on food technology, said Peter Muriana, FAPC food microbiologist and chair of the symposium.

“The event will provide an opportunity for graduate students to make oral and poster presentations of their work and for scientists and researchers to network with others in the food and agricultural field and possibly foster future collaborations among colleagues,” Muriana said.

A special feature of the symposium is a presentation by keynote speaker Chef John Matchuk, research and development manager of Grecian Delight Foods in Chicago, Ill. The title of his presentation is “The Role of a Chef in a Product Development Team.”

“We are very excited that Chef Matchuk will be our keynote speaker,” said Chuck Willoughby, FAPC business planning and marketing specialist and IFT-OK treasurer. “Both food scientists and research chefs play an important part in developing or improving food products. His presentation will discuss how to get culinary responses from scientists and technical answers from chefs. Both large and smaller food companies can benefit from this topic.”

Immediately following the symposium, student awards will be presented in both the oral presentation and the poster presentation categories. Students winners will each be awarded $250.

The symposium is open to anyone who wants to attend. There is no charge for the day’s events; however, registration is required to receive a complimentary lunch ticket.

This year’s research symposium is being held in conjunction with OSU Research Week, which runs Feb. 19-23, 2007.
